- 6 cups ham stock (boil down ham bone)
- 5 bay leaves

- 2 celery ribs, with leaves finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 teaspoon sugar (optional)
- 1 teaspoon lemon juice
- 1 bay leaf

- 1 dash thyme
- 1 dash marjoram
