• 65g / 3 oz Pancetta/bacon lardons

• Lug of Olive oil
• 2 Medium onions
• 2 Carrots
• 3 Celery sticks
• 1 teaspoon Gran Luchito Chipotle Paste
• 2 Garlic cloves
• Small glass red wine
• 1 tablespoon Tomato puree
• 500ml / 2 cups Beef stock
• Few sprigs of thyme
• 1.5kg / 3.3 lb Potatoes
• 1 tablespoon Gran Luchito Chipotle Mayo
• 25g / 1 oz Butter (plus extra for on top)
• Splash milk
• 100g / 3 1 / 2 oz Cheddar cheese
• Salt
