Ingredients

• 150ml vegetable oil, plus extra for greasing
• 75g Whole Earth Smooth Original Peanut Butter
• 4 medium eggs
• 200g soft light brown sugar
• 225g plain flour, plus 1 tablespoon for the tin
• 1 teaspoon baking powder
• 1 ½ teaspoons ground cinnamon
• 200g carrots, peeled and finely grated (prepared weight)
• Juice and zest of ½ orange
• Zest of ½ lemon
