Ingredients

• 2 tbsps olive oil
• 1 onion, chopped
• 2 carrot, diced
• 2 celery stalks, diced
• 3 garlic, minced cloves
• 1 tofu, firm and drained block
• 240 mls (1 cup) mushrooms, sliced
• 240 mls (1 cup) frozen peas
• 240 mls (1 cup) vegetable broth
• 2 tbsps tomato paste
• 2 tbsps soy sauce
• 1 tbsp cornstarch
• 2 tbsps water
• 4 potatoes, peeled and chopped
• 240 mls (1 cup) non-dairy milk
• 2 tbsps vegan butter
• 1 tsp salt
• 0.5 tsp black pepper
