Ingredients

• 6 russet potatoes, scrubbed clean
• 2 tbsp Urban Meadow® butter
• 4 links Aidells® Cajun Style Andouille sausage, chopped
• 1 onion, chopped
• 3 garlic, chopped
• 6 cups chicken stock
• 1/2 cup Urban Meadow® heavy cream
• 1/4 cup fresh flat-leaf parsley, finely chopped
• to taste Urban Meadow® salt and black pepper
• 4 oz Urban Meadow® cheddar cheese, shredded
• 1 cup sour cream
• 1 bunch chives, snipped
