Ingredients

• 1 kg mixed tomatoes
• 1/2 red onion, thinly sliced
• 1/2 tsp caster sugar
• 75 g Manchego cheese
• 75 g giant capers (alcaparrones)
• 30 g toasted flaked almonds
• 30 g pumpkin seeds
• Fresh parsley
• 2 garlic cloves
• 2 tbsp sherry vinegar
• 6 tbsp extra virgin olive oil
• 6 slices Serrano ham or Jamón Ibérico (optional)
