Greek Style Roasted Spatchcock Chicken – Lilydale®

Ingredients

• 1 Lilydale ® Whole Chicken
• 4-6 Yukon gold potatoes, cut into large chunks
• 1/2 cup (125 mL) Mastro® Extra Virgin Olive Oil
• 1/2 cup (125 mL) lemon juice
• 5 cloves fresh garlic, minced
• 2 tsp (10 mL) salt
• 1 1/2 tsp (7 mL) black pepper, coarse
• 4 tsp (20 mL) fresh oregano, chopped
• 1/4 cup (65 mL) fresh parsley,chopped
• 1/4 cup (65 mL) kalamata olives, whole, pitted
• 1 lemon, cut into wedges
