  • 1 leftover rotisserie chicken, about u00be leftover
  • u00bd cup very finely diced red or sweet onion, divided
  • 2 tablespoons olive or vegetable oil
  • 2 teaspoons curry powder, plus more to taste
  • 2-3 teaspoons kosher salt, divided
  • Fresh ground black pepper
  • u00be cup mayonnaise
  • Juice of 1 lime (or about 1 to 1 u00bd teaspoons of lime juice)
  • 1/3rd cup chopped celery, very small dice (about 1 stalk, depending on size)
  • 1/3rd cup dried cranberries, soaked in cold water for 10-15 minutes, then drained
