Ingredients

• 1 chicken, cut into 12, rubbed with salt and pepper, set aside for 10 minutes
• 1 thumb-size ginger, crushed
• 1 lemongrass, crushed
• 5 keffir lime leaves, stalk removed
• Water
• 1 spring onion, sliced
• 1 handful thai basil leaves
