Gorgonzola, pear and walnut Risotto - Wines of Greece

Ingredients

• 400 gr arborio rice
• 2 Kaiser pears peeled and cut in cubes
• 200 gr gorgonzola
• 150 gr butter (100 gr at the beginning and 50 gr at the end)
• 1 liter vegetable stock
• 1 shallot, finely chopped
• 1 glass of white wine
• 40 gr walnuts
• 150 gr grated parmesan
• salt
• pepper
