- ½ tsp salt
- 125 ml water
- 125 ml red wine vinegar (we use a Greek Corinthian vinegar)
- 90 g light brown sugar
- 4–6 beetroots (about 300g)
- 2 tbsp salt
- 1 dried red chilli
