Ingredients

  • 1 cup (100g) rolled oats (labelled jumbo or old fashioned)
  • 1 cup (120g) polenta or cornmeal
  • 1 cup (120g) wholegrain spelt flour
  • 1/4 cup (50g) plain flour (all purpose flour in the US). This makes the pancakes fluffier. You could use all spelt if you prefer.
  • 3 tablespoons chia seeds
  • 1 teaspoon bicarbonate of soda (baking soda in the US)
  • 1/2 teaspoon sea salt
  • Optional but transformational – 1/2 cup (60g) leftover cooked brown rice (see note above – I keep cooked brown rice in the freezer so just grab a handful and add it without defrosting it)
  • 2 large eggs
  • 3 tablespoons plain full fat yoghurt
  • 1 cup (250ml) milk – either cow or plant milk
  • 1 cup (250ml) cold water
  • A couple of tablespoons of butter.
