Ingredients

• 2/3 head Lettuce , shredded,washed and spun dry
• 1-2 Cucumber , peeled (optional) and cut in 1 inch chunks
• 1/4 bunch Parsley
• 4 tablespoons Lemon Juice
• 1 tablespoon Dijon Mustard
• 1 teaspoon Honey , or agave nectar
• 1 clove Garlic , peeled
• 1/2 cup Extra Virgin Olive Oil
• Salt and Pepper , to taste
