Ingredients

• 6 tablespoon unsalted butter
• 2 tablespoon olive oil
• 2 leeks white and pale green parts, chopped, washed and dried
• 6 cup chicken stock
• 1 small bay leaf
• ½ teaspoon kosher salt plus more as needed
• squeeze of lemon juice to taste
• 1 pinch cayenne pepper to taste
• 1 apple such as fuji
• ¼ teaspoon white pepper
• ¼ cup dry white vermouth
• 1 yellow, gold or orange cauliflower trimmed cored and cut into thin slices
• 1 carrrot thinly sliced
• 1 onion diced
• ½ teaspoon curry powder
