Ingredients

• 1/2 cup boiling water
• 125 g dates, pitted and chopped
• 1/2 t bicarbonate of soda
• 4 T butter
• 100 g brown sugar
• 1 large free-range egg, beaten
• 140 g flour, sifted
• 1/2 t baking powder
• 1/4 t salt
• 1/2 t ground cinnamon
• 1/4 t ginger
• 1/4 t nutmeg
• 50 g pecan nuts, chopped
• 1 orange, zested
• For the brandy sauce:
• 2 t butter
• 1 stick cinnamon
• 1/4 cup water
• 1/4 cup brandy
• 1 t vanilla essence
