  • 2 large eggs
  • 2 cups panko bread crumbs

  • 1 cup sherry vinegar or red wine vinegar
  • 1/2 cup sugar
  • 1 medium red onion, halved and thinly sliced
  • 1/2 cup dried cherries
  • 1 tablespoon finely chopped shallot
