Ingredients

• 180g Doritos Chilli Heatwave
• 226g plain flour
• 2 tsp salt
• 100g butter (split into 70g and 20g)
• 60ml water
• 3 whole eggs
• 500g pork mince
• 300g pork loin, finely chopped
• 4 tsp chilli powder
• 2 tsp onion powder
• 2 tsp garlic powder
• 2 tsp dried oregano
• 2 tsp cinnamon
• 2 tsp coriander seeds
• 2 tsp cumin seeds
• 3 tbsp chipotle paste
• 250ml pork stock
• 15g gelatine
