Ingredients

  • Olive oil
  • One ball pizza dough, recipe here or any one pound ball
  • 2 large yellow onions, finely diced
  • 1 tablespoon butter
  • 3/4 pound ground beef
  • Kosher salt & coarse ground black pepper
  • 1/2 cup mayo
  • 1 tablespoon ketchup
  • 1 tablespoon sriracha
  • 1/2 tablespoon yellow mustard
  • 1 large dill pickle, diced
  • 1/2 pound American cheese, shredded
  • 1 cup chopped iceberg lettuce
  • 1/2 cup diced tomatoes
  • Oil pan(s) generously, including up the sides
  • Remove dough from fridge 2 hours before using, add to the pan and gently stretch out, don't try to get to the edges yet - set aside for 30 minutes
  • Put a tablespoon of oil and the butter in a large skillet over medium high heat, and add the onions - cook 15-20 minutes, stirring often until caramelized then remove to a bowl
  • Don't wipe out the pan, but put in another tablespoon of oil and the ground beef - cook until no longer pink - remove and set aside
  • Make the sauce - combine the mayo, ketchup, sriracha, mustard, and diced pickled in a bowl, mix well and set aside
  • Preheat oven to 500
  • Bake 15-20 minutes until done (or less if a thinner version)
  • Remove, and top with the lettuce and tomato
  • Happy eating
