Bostock's Organic Free Range Chicken NZ

Ingredients

• Size 16 Bostock Brothers Organic chicken
• 1 tbsp fresh ginger – minced
• ¼ cup sweet chilli sauce
• 75g butter – softened
• 1 cup coconut milk
• 2cm piece of ginger – finely diced
• 1 large red onion – sliced into thin wedges
• ¼ cup lime juice
• 1 tbsp lemongrass paste
• 1 tbsp sesame oil
• 1 cup of coriander – chopped
• 2 cups of white rice
• 3 cups of water
• 1 large head of broccoli – cut the florets into quarters
• 2 cups peas
• 3 large bok choy – slice the leaves in half lengthways
