Penne Alla Vodka with Chicken (GF/DF) – Goodness With G

Ingredients

• 1 box pasta of choice (I love the Jovial Foods brown rice penne for a gluten-free option)
• 2 tbsp extra virgin olive oil
• 1.50 lbs chicken breasts (boneless & skinless), cut into bite-sized pieces
• 1 yellow onion, diced
• 1 can (28 oz) diced tomatoes
• ⅔ cup vodka
• ¾ container of Kite Hill cream cheese
• 2 tbsp nutritional yeast (or parmesan for non-dairy free)
• ½ cup fresh basil, sliced (more for topping)
• 1 tsp garlic powder
• 2 tsp dried oregano
• ½ tsp crushed red pepper (more if you like spice)
• 1 tsp black pepper
• 1 tsp salt
