Ingredients

• 1 medium sweet potato
• 2 Tbsp olive oil
• Salt and pepper
• ½ cup diced onion
• ½ cup diced red pepper
• 1 cup chopped kale
• 2 garlic cloves
• 1 tsp grated ginger, or 2 tsp pre-grated from tube
• ¼ tsp cumin seed
• 1 tsp curry powder
• 6 Large eggs
• ¼ cup half and half
• 2 tsp cilantro
• ¼ cup crumbled feta cheese
