Zucchini Dip Recipe - Levana Cooks

Ingredients

• 1/3 cup olive oil
• 1 large onion, halved across, then sliced very thin
• 6 large zucchini, unpeeled, shredded
• 4 cloves garlic, chopped fine
• 1/2 cup mayonnaise, low fat OK
• grated zest of 1 lemon
• 2 good pinches nutmeg
• salt and pepper to taste
