• 1 pound chicken thighs cut into 2 inch pieces
• 1 pound shrimp
• 1/4 cup Vegetable oil
• 1/2 cup flour
• 1 teaspoon cajun spice rub
• 1 large onion minced
• 1 bell pepper minced
• 1 large stalk celery minced
• 4 cloves garlic crushed
• 1/2 teaspoon Kosher Salt
• 2 quarts Chicken Stock
• 1 15 oz can diced tomatoes
• Salt
• pepper
