Ingredients

• 2 medium bananas (400g), peeled and chopped
• ¼ cup (45g) brown (light brown) sugar
• 70g unsalted butter, chopped
• 2 tablespoons whisky (or maple syrup)
• 1½ cups (375ml) milk
• ½ cup (40g) desiccated coconut
• 1 tablespoon vanilla extract
• 2 eggs
• ⅓ cup (50g) plain (all-purpose) flour
• ¼ cup (55g) caster (superfine) sugar
• ¼ cup (60ml) single (pouring) cream
• 2 teaspoons honey
• 80g dark chocolate, finely chopped
• sea salt flakes, to serve
