• 6 tablespoons unsalted butter
• 2 tablespoons Cognac or brandy
• 1/3 cup granulated sugar
• 4 large eggs, separated
• 3 tablespoons cake flour
• Confectioners' sugar, for dusting
• Fresh raspberries or currants, for garnish
