Ingredients

• 2 cups white kidney beans, uncooked
• Pinch baking soda
• Water for soaking beans
• 2 tablespoons olive oil
• 3 ounces (90 g) bacon, diced
• ½ large red onion, chopped
• 2 ribs celery, diced
• 2 teaspoons finely chopped fresh rosemary
• 1 teaspoon dried oregano
• 4 cloves garlic, minced
• 1 bay leaf
• 4 cups chicken stock
• 2 cups broken buccatini pasta
• 6 ounces (175 g) crushed tomatoes
• 2 cups pasta cooking water; reserved for beans
