- 2 tablespoons olive oil
- 1 package extra-firm tofu, patted dry and cut into 1/2-inch squares
- 1 tablespoon dark sesame oil
- 2 garlic cloves, minced
- 1 tablespoon peeled minced fresh ginger
- 2 cups snow peas or sugar snap peas, trimmed
- 1 red bell pepper, sliced into 2-inch strips
- 1/2 cup vegetable broth
- 1 cup light coconut milk, well-stirred
- 1/4 cup low-sodium soy sauce
- 1 teaspoon grated lime rind
- 1 tablespoon fresh lime juice
- 1/2 cup sliced green onions (optional)
