Udon Stir-Fry with Sausages

Ingredients

• 3 packages fresh udon noodles
• 1 package Jacks gourmet sausages (chopped)
• 1 onion (roughly chopped)
• 3 cloves garlic from marinade (minced)
• 1 ginger from marinade (grated)
• 3 scallions (sliced, whites and greens separated)
• 5 large cremini mushrooms (sliced)
• 1 can water chestnuts (drained)
• 2 cups purple cabbage (shredded)
• marinade from soy sauce egg (see notes)
• 1 tbsp cornstarch
• 2 tsp honey
