Merv’s Carrot Pumpkin Soup – Oracibo

Ingredients

• 1 large onion, coarsely chopped
• 1 Tbsp. butter
• 1 lb. carrots, sliced
• 5 cups chicken stock (see below) or tinned low salt/no salt chicken broth
• ¼ tsp. dried thyme, crushed
• 1/8 tsp. freshly ground black pepper
• 1 cup tinned pumpkin
