Ingredients

• 2 tbsp (30 ml) almond butter
• 1 tbsp (15 ml) sambal oelek (mccormick )
• 2 tbsp (30 ml) ponzu sauce
• 1 tbsp (15 ml) lime juice
• 2 tsp (10 ml) warm water
• 1 tbsp (15 ml) liquid honey squeeze (billy bee/)
• 2 tbsp (30 ml) vegetable oil
• 1 tsp (5 ml) salt
• 3 (750 ml) cooked soba/buckwheat noodles 225g uncooked
• 1/2 cup (125 ml) sliced green onion
• 1 cup (250 ml) seeded and julienned cucumber
• 1 cup (250 ml) peeled and julienned carrots
• 1/2 cup (125 ml) julienned yellow pepper
• 1 package (200 g) enoki mushrooms
• 1/2 cup (125 ml) sliced and toasted almonds
