Ingredients
- 450ml (¾ pint) milk
- 100g (4oz) ground almonds
- 150ml (¼ pint) single cream
- 1 egg yolk
- 50g (2oz) butter
- 50g (2oz) plain flour
- 900ml (1½ pints) chicken stock – use home-made if you possibly can
- Salt
- Ground white pepper (this avoids black specks in your soup)
- A few extra ground almonds, for serving
