Cucumber Guacamole - Del Fresco Pure

Ingredients

• 2 DelFrescoPure®Mini Crunchers Cucumbers®
• ½ of one red DelFrescoPure® Sweet Rainbow Peppers, washed, core removed, and cut into bite-sized pieced
• 6 DelFrescoPure®G.R.EAT! Grab Rinse and EAT!® grape tomatoes, washed and cut into quarters
• 2 ripe avocados, washed, skinned and pitted
• 2 cloves garlic, minced
• 1 lime, zested and juiced (2 tbsp of juice needed)
• 1 tbsp olive oil
• 2 tbsp chopped fresh cilantro
• Salt and Pepper to taste
