Ingredients

• 1/2 cup butter or margarine, softened
• 3/4 cup sugar
• 1 cup peeled, cooked and mashed or pureed carrots (scant pound)
• 1 egg
• 2 cups flour
• 2 tsp. baking powder
• 1 tsp. salt
• 1/2 tsp. sugar
• 1/2 tsp. allspice
• 1/4 tsp. cinnamon
• 1/3 cup orange juice
• 1 tsp. grated orange peel
• 1/2 flaked coconut
• 1/3 cup chopped walnuts
