- 1 large Carrots finely diced
- 2 Celery stalks, finely diced
- 250 g Cheddar Cheese coarsely grated
- 2 Eggs lightly beaten
- 3 cloves Garlic minced
- 1 tbsp Olive Oil plus extra for greasing
- 1 Onion finely chopped
- 400 g SuperValu Irish Beef Mince
- 2 tbsp SuperValu Tomato Purée
- 2 medium Sweet Potatoes about 500g, peeled & coarsely grated
- 250 ml Vegetable Stock
- 1 tbsp Worcestershire Sauce
