Ingredients

  • 3 Tbsp olive oil
  • 1 cup scallions, chopped
  • 2 cloves garlic, finely chopped
  • ½ cup white onion, chopped
  • 2 ½ lb fresh fava beans in the pod, shelled (about ½ lb), blanched and peeled
  • 1 cup zucchini, finely diced
  • ½ tsp crushed red pepper flakes
  • 2 cups romaine leaves, shredded
  • 1 Tbsp mint leaves, finely sliced
  • 1 Tbsp basil, finely sliced
  • Splash of white wine
  • Salt and pepper
  • Optional: Grated Parmesan cheese
