- 3 Tbsp olive oil
- 1 cup scallions, chopped
- 2 cloves garlic, finely chopped
- ½ cup white onion, chopped
- 2 ½ lb fresh fava beans in the pod, shelled (about ½ lb), blanched and peeled
- 1 cup zucchini, finely diced
- ½ tsp crushed red pepper flakes
- 2 cups romaine leaves, shredded
- 1 Tbsp mint leaves, finely sliced
- 1 Tbsp basil, finely sliced
- Splash of white wine
- Salt and pepper
- Optional: Grated Parmesan cheese
