Ingredients

  • 2 cups finely chopped yellow onions

  • 2 cups clam juice
  • 2 cups chicken stock
  • ½ cup dry white wine
  • 3 cups 1/2-inch cubed, peeled potatoes, about 1 1/4 pounds
  • 1 cup heavy cream
  • salt and freshly ground black pepper, to taste
  • 1 1/2 pounds Nantucket Bay scallops (regular bay scallops may be substituted)
