• 1 cup (250 mL) grated Canadian Emmental cheese
• 1/4 tsp (1 mL) ground nutmeg
• Pepper to taste
• 1 lb (450 g) Black Forest ham sliced
• Crepes (16 thin crepes):
• 3/4 cup (180 mL) all-purpose flour
• 1/2 tsp (2 mL) salt
• 1 tsp (5 mL) baking powder
• 2 tbsp (30 mL) icing sugar
• 2 eggs
• 2/3 cup (160 mL) Milk
• 1/3 cup (80 mL) water
