Ingredients

• 4 very thick rashers of bacon trimmed of rind, or 250 grams bacon pieces
• 2 tablespoons oil
• 1 leek, trimmed and washed
• 2 parsnips, peeled and diced
• 2 stalks celery, trimmed and sliced
• 1 large kumara, peeled and diced
• 1 cup green split peas
• 2 litres chicken or beef stock
• 1 bunch of spinach
• chopped parsley to taste, optional
