• 1 2 1/2 - 3 pound rabbit, cut into 4 pieces
• 1 tablespoon Emerilís Original Essence
• 1/4 cup vegetable oil
• 1 cup chopped yellow onions
• 3/4 cup chopped red bell peppers
• 1 tablespoon chili powder
• 1 teaspoon ground cumin
• 1/2 teaspoon salt
• 1 tablespoon minced garlic
• 1 cup finely chopped roasted peanuts
• 2 cups chicken stock, or canned low-sodium chicken broth
• 1 tablespoon apple cider vinegar
• 3 tablespoons crunchy peanut butter
