Ingredients

• 1 cup couscous
• 1 tbs olive oil
• 1 tbs red wine vinegar
• 1 cup cold water
• 2 tsp fennel seeds
• 1½ tsp coriander seeds
• 1 tsp cumin seeds
• sea salt and freshly ground black pepper
• ½ preserved lemon
• zest and juice of 1 lemon
• 125g pine nuts, toasted
• ¾ cup coriander leaves, coarsely chopped
• ½ cup flatleaf parsley leaves, coarsely chopped
• 1 pomegranate
• 1kg piece tuna loin
• 1-2 tbs olive oil
• salt and pepper
