• 5 lbs Yukon gold potatoes, peeled and cut into 1-inch cubes
• 1 1/3 cup mayonnaise
• 1/3 cup creme fraiche
• 1/4 cup champagne vinegar
• 2 tablespoons Dijon mustard
• 2 teaspoon hot sauce (preferably Texas Pete)
• 1 cup finely diced celery (about 4 medium stalks)
• 2/3 cup finely diced shallots (about 3 medium)
• 1/4 cup finely slice chives, divided
• 3 tablespoons finely minced fresh parsley
• Kosher salt
• Freshly ground black pepper
