Ingredients

• 1 large head of broccoli, with stem (about 1 ¾ pounds)
• 1 large or two medium zucchini, (about 1 pound total)
• 1 medium sweet potato (about 12 ounces), skin on
• ½ pound carrots
• 1 large onion
• 5 large eggs, beaten
• ¼ cup olive oil
• ¼ cup whole wheat pastry flour
• 1 teaspoon salt
• ¼ teaspoon freshly ground black pepper
