Ingredients
- 1 produce bag full of raw nettles (to make about 2 cups blanched and trimmed nettles)
- ½ cup toasted pine nuts
- ½ cup organic extra virgin olive oil
- ½ cup grated parmesan or pecorino
- 3-4 cloves garlic
- 2-3 tablespoons lemon juice
- Sea salt (I used ½ teaspoon)
- Fresh ground pepper
- 2 tablespoons extra virgin olive oil
- 2 small shallots, diced
- 2 cloves garlic, finely minced
- 3 medium sized yellow potatoes, rinsed and dice
- 2-3 slices bacon, cut into small pieces (or ¼ cup diced pancetta)
- 3-4 handfuls rinsed baby nettle leaves, base stems trimmed*
- 3 cups vegetable broth or bone broth
- 1/3 cup heavy cream (may replace with canned full fat coconut milk)
- 1 tablespoon honey
- Juice of ½ lemon
- Splash of apple cider vinegar (optional)
- Pinch of red chili flakes (optional)
- Sea salt and pepper to taste
