sweet potato 'donuts' - Summers Sprouted Flour: Organic Sprouted Flour and Grains

• 1 small to medium sweet potato
• 1 tbsp melted butter
• 1/4 c maple syrup
• 1/2 c Sucanat
• 2 eggs
• 1/4 c kefir cheese
• 1 tsp vanilla
• 1/2 c Summers Sprouted Spelt Flour
• 1/2 c tapioca or quinoa flour
• 2 tsp baking powder
• 1/2 tsp cinnamon
