Lion’s Mane Taco “Meat” / Heirloom Farmers Markets

Ingredients

• 2 tbsp olive oil
• 1/2 onion, thinly sliced
• 2 large chunks of Lion’s Mane Mushroom, shredded (other mushrooms will great here too!)
• 1 pepper of choice (mild or hot), thinly sliced
• 2-3 garlic cloves, peeled and minced
• 1 tsp chili powder (you can also use your favorite taco seasoning instead of the next three spices)
• 1 tsp cumin
• ½ tsp coriander powder
• ½ tsp dried oregano
• salt and pepper to taste
