Ingredients

• sea salt and freshly ground black pepper
• black beans and cheese, for serving (optional)
• juice of 1/2 a lime, plus wedges to garnish
• 1 1/4 cups cherry tomatoes, diced
• 6 small corn tortillas, warmed
• 1/2 red onion, finely chopped
• guacamole, for serving
• small handful fresh cilantro, roughly chopped, plus more for serving
• sea salt to taste
• 4 large free-range eggs, lightly beaten
