• 1.5kg whole chicken
• 1 carrot, roughly chopped
• 2 sticks celery, roughly chopped
• 1 onion, skin on, quartered
• 5 black peppercorns
• 2 bay leaves
• small handful flat-leaf parsley
• 1 tbsp olive oil
• 1 onion, finely diced
• 2 carrots, peeled and finely diced
• 2 sticks of celery, finely diced
• 1 leek, finely chopped
• 75g savoy cabbage, core removed and shredded
• 1 tbsp finely grated Parmesan, plus extra to serve
• crusty bread rolls, to serve
