  • 400g frozen flaky puff pastry, thawed (I buy in a roll, not flat sheets)
  • 3-4 zucchini, depends on size!
  • 150g goats feta
  • 80g ricotta
  • 1 1/2 tbsp olive oil, plus extra for drizzling
  • 1 tsp fresh thyme leaves
  • 2 lemons, zest and juice
  • 1 egg
  • Salt and pepper
  • Fresh basil leaves and thyme to serve
