Ingredients

  • 10 to 12 medium-size to large fresh curry leaves
  • 1 or 2 fresh green Thai, cayenne, or serrano chiles, to taste, stems removed, cut in half lengthwise (do not remove the seeds)
  • ¼ teaspoon ground turmeric
  • ½ cup thick coconut milk (see Tips)
  • 1 teaspoon coarse kosher or sea salt
  • ¼ cup red cowpeas (sabud chowli), picked over for stones (see Tips)
  • 1½ pounds white winter melon (see Tips), peeled, seeded, and cut into 1-inch cubes
