Hot Honey Roasted Christmas Carrots

Ingredients

• 1kg carrots
• 3 tbsp honey
• 1 tsp dried chilli flakes
• 1 tsp dried chipotle chilli flakes
• 1 tsp fennel seeds
• 1 tsp coriander seeds
• salt, to taste
• handful of carrot tops,, finely chopped
• handful of parsley, finely chopped
• 1 tbsp walnuts
• 1 tbsp hazelnuts
• 1 tbsp pistachios
• 5 tbsp olive oil
• 2 lemons, juiced
• salt and pepper, to taste
• 2 camembert, rind removed
• 2 tbsp creme fraiche
